I haven't ever tried the Ampersand paper! I'd like to! I absolutely LOVE Wallis! I HIGHLY recommend it! It's made a HUGE difference in my work since 2006 when I took a workshop with Albert Handell & he taught me about it! My work took an instant QUANTUM leap when I started using it! I'd been using ( & getting frustrated with) Canson Paper, before that! I still like it for some things, but I get so much better results with the Wallis, I don't even buy much else any more! I have a fairly heavy hand myself & I'm learning to lighten it up & I think it's helping my quality! I find Wallis has plenty of tooth for me! If I fill it, I just work the spot I want to adjust with a bit of alcohol & that lets the color soak in so I can make adjustments! Just soak a paper towel & blot the area with it ! It dries quick & lets you add as you please!
My favorite Pastels are my Unisons! They are soft enough to get the techniques down that I want , yet hard enough to not crumble unless I forget my own strength! LOL!

The NuPastels are great for detail work! You can sharpen them on a piece of Sanding screen & not waste a ton of money! Being heavy handed, you might like some of the harder pastels like Winsor Newton & Rem
andt! It's such a personal thing! It's hard to say ! I like various
ands for different reasons & purposes! Unison is usually what I grab 1st, then Winsor Newton. I've got tons of pastels! Pencils & all! I don't use the pencils much, their too hard & chalk like. I find them too hard to even make a mark with in most cases. I use them to sign my work sometimes. They sharpen nice & I like to put an edge on them with sand paper & I can get a really fine line that way!
